Ingredients

  • 1 pound ground beef (80/20 recommended for best flavor)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 4 cups beef broth
  • 2 cups milk (whole milk recommended for creaminess)
  • 1 cup shredded cheddar cheese (sharp or medium)
  • 1/2 cup shredded Velveeta cheese (or another processed cheese for ultimate meltiness)
  • 1/2 cup all-purpose flour
  • 1/4 cup butter
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • Optional toppings: cooked bacon bits, chopped fresh parsley, diced tomatoes, extra shredded cheese, croutons, sour cream Optional

Equipment

  • Large pot or Dutch oven

Method

  1. In a large pot or Dutch oven over medium-high heat, add the ground beef. Break it up with a spoon and cook until browned. Drain off any excess grease. Add the chopped onion, diced carrots, and diced celery to the pot with the browned beef. Cook, stirring occasionally, until the vegetables begin to soften, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
1 pound ground beef (80/20 recommended for best flavor), 1 large onion, finely chopped, 2 medium carrots, peeled and diced, 2 stalks celery, diced, 2 cloves garlic, minced
  2. Sprinkle the flour over the meat and vegetable mixture. Stir well and cook for 1-2 minutes, allowing the flour to coat everything and cook out its raw taste. This step is crucial for creating a thick, creamy base for your soup.
1/2 cup all-purpose flour, 1 pound ground beef (80/20 recommended for best flavor), 1 large onion, finely chopped, 2 medium carrots, peeled and diced, 2 stalks celery, diced
  3. Gradually whisk in the beef broth, a cup at a time, ensuring no lumps form. Once all the beef broth is incorporated, slowly add the milk while continuing to whisk. This gradual addition helps achieve a smooth consistency.
4 cups beef broth, 2 cups milk (whole milk recommended for creaminess)
  4. Bring the soup to a gentle simmer over medium heat. Reduce the heat to low, cover, and let it simmer for at least 15 minutes, or until the vegetables are tender and the soup has thickened to your desired consistency. Stir occasionally to prevent sticking.
  5. Reduce the heat to the lowest setting. Add the shredded cheddar cheese and Velveeta cheese to the pot. Stir gently until the cheeses are completely melted and the soup is smooth and creamy. Be careful not to let the soup boil after adding the cheese, as this can cause it to separate.
1 cup shredded cheddar cheese (sharp or medium), 1/2 cup shredded Velveeta cheese (or another processed cheese for ultimate meltiness)
  6. Season the Easy Cheeseburger Soup with salt and black pepper to taste. Ladle the hot soup into bowls and garnish with your favorite toppings like crumbled bacon, fresh parsley, diced tomatoes, a dollop of sour cream, or extra shredded cheese.
1 teaspoon salt (or to taste), 1/2 teaspoon black pepper (or to taste), Optional toppings: cooked bacon bits, chopped fresh parsley, diced tomatoes, extra shredded cheese, croutons, sour cream

Notes

This soup is best enjoyed fresh, but leftovers can be stored in the refrigerator for 3-4 days. For freezing, it's recommended to freeze before adding the cheese.
