Ingredients
  

  • 1 tablespoon olive oil
  • 1 large yellow onion finely chopped
  • 2 cloves garlic minced
  • 1.5 pounds boneless, skinless chicken breasts or thighs cut into small bite-sized pieces
  • 1 teaspoon Cajun seasoning adjust to your spice preference
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper optional, for extra heat
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 (15-ounce) can diced tomatoes undrained
  • 1 (8-ounce) can tomato sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 6-8 hamburger buns split

Method
 

  1. Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the finely chopped yellow onion and cook, stirring occasionally, until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant, being careful not to burn it.

  2. Add the bite-sized chicken pieces to the skillet. Sprinkle evenly with Cajun seasoning, smoked paprika, cayenne pepper (if using), salt, and black pepper. Stir well to coat the chicken with the spices. Cook, stirring frequently, until the chicken is no longer pink and is cooked through, about 6-8 minutes.

  3. Pour in the undrained diced tomatoes, tomato sauce, brown sugar, Worcestershire sauce, and apple cider vinegar. Stir everything together, scraping up any browned bits from the bottom of the skillet.

  4. Bring the mixture to a simmer. Reduce the heat to low, cover, and let it simmer for at least 10-15 minutes, or until the sauce has thickened to your desired consistency. This simmering time allows the flavors to meld beautifully. Stir occasionally to prevent sticking.
  5. While the sloppy joes are simmering, you can lightly toast your hamburger buns. You can do this in a toaster, under the broiler for a minute (watch them closely!), or in a dry skillet until golden.

Notes
