- Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the finely chopped yellow onion and cook, stirring occasionally, until softened and translucent, about 5-7 minutes. - Add the bite-sized chicken pieces to the skillet. Sprinkle evenly with Cajun seasoning, smoked paprika, cayenne pepper (if using), salt, and black pepper. Stir well to coat the chicken with the spices. - Pour in the undrained diced tomatoes, tomato sauce, brown sugar, Worcestershire sauce, and apple cider vinegar. - Bring the mixture to a simmer. Reduce the heat to low, cover, and let it simmer for at least 10-15 minutes, or until the sauce has thickened to your desired consistency. This simmering time allows the flavors to meld beautifully. Stir occasionally to prevent sticking.
- While the sloppy joes are simmering, you can lightly toast your hamburger buns. You can do this in a toaster, under the broiler for a minute (watch them closely!), or in a dry skillet until golden.6-8 hamburger buns
