  • 2 large ripe tomatoes, finely diced
  • 1 ball fresh mozzarella, diced into small cubes
  • ¼ cup fresh basil leaves, thinly sliced (chiffonade)
  • 1 tablespoon balsamic glaze optional, for drizzling

Method
 

  1. Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet. Brush both sides of each slice lightly with olive oil.

  2. Bake the baguette slices for 8-10 minutes, or until they are lightly golden brown and crisp. Keep an eye on them to prevent burning.

  3. Once toasted, remove the bread from the oven. While still warm, rub each slice with the cut side of the halved garlic clove. This will impart a subtle, fresh garlic flavor without being overpowering.

  4. In a medium bowl, combine the diced tomatoes, diced fresh mozzarella, and the thinly sliced basil.
