Ingredients
  

  • 1/2 cup rolled oats (old-fashioned oats work best for texture)
  • 1 cup milk of choice (dairy, almond, soy, or oat milk are all great options)
  • 2 tablespoons Biscoff spread (creamy or crunchy, your preference!)
  • 1 tablespoon chia seeds (for thickening and added nutrients)
  • 1 teaspoon sweetener (maple syrup, honey, or agave nectar, adjust to taste)
  • Pinch of salt (enhances the flavors)
Optional toppings
  • crushed Biscoff cookies
  • a dollop of yogurt
  • fresh fruit like banana slices or berries
  • a drizzle of extra Biscoff spread

Equipment

Method
 

  1. In a medium-sized bowl or jar, whisk together the milk and Biscoff spread until the Biscoff spread is mostly incorporated. Don't worry if there are a few small lumps; they'll dissolve overnight.

  2. Add the rolled oats, chia seeds, sweetener, and a pinch of salt to the wet ingredients. Stir everything together thoroughly, ensuring there are no clumps of oats or chia seeds stuck at the bottom. Make sure the chia seeds are well distributed to prevent them from clumping together.

  3. Pour the mixture into a single-serving jar or container with a lid. Seal the container tightly and refrigerate for at least 4 hours, but ideally overnight. This allows the oats and chia seeds to absorb the liquid, thicken the mixture, and meld the flavors beautifully.
  4. In the morning, the overnight oats should be thick and creamy. Give them a good stir. If the consistency is too thick for your liking, you can add a splash more milk to reach your desired texture. Spoon the oats into a bowl and add your favorite toppings for an extra layer of flavor and texture.

Notes

They can be kept in the refrigerator for up to 3-4 days. Freezing is also an option for longer-term storage for up to 1 month. Thaw them in the refrigerator overnight before enjoying. Reheating is not typically necessary as they are designed to be eaten cold, but if you prefer them warm, you can gently heat them in a saucepan over low heat or in the microwave.
