For the Salad
  • 2 cups Pineapple Chunks Fresh or well-drained canned
  • 1 cup Mandarin Orange Segments Drained
  • 1.5 cups Red Grapes Halved
  • 1 cup Shredded Coconut Unsweetened
  • 1/2 cup Pecans Chopped, toasted lightly
For the Lightened Dressing
  • 1 cup Plain Greek Yogurt Non-fat or 2%
  • 1/4 cup Whipped Topping Light version, thawed
  • 1 teaspoon Vanilla Extract

  1. Prepare all fruit: Drain pineapple and mandarin oranges thoroughly. Halve the grapes if they are large.
  2. In a small bowl, whisk together the Greek yogurt, light whipped topping, and vanilla extract until smooth and well combined. This forms the lightened dressing base.
  3. In a large mixing bowl, gently combine the pineapple chunks, mandarin orange segments, grapes, shredded coconut, and chopped pecans.
  4. Pour the yogurt dressing over the fruit mixture. Use a rubber spatula to carefully fold the ingredients together until the fruit is evenly coated. Avoid over-mixing to keep the fruit intact.
  5. Cover the bowl and chill the ambrosia salad in the refrigerator for at least 1 hour before serving. This allows the flavors to meld.
  6. Taste and adjust sweetness if necessary before serving. Garnish with extra coconut or pecans if desired.

Notes

For an extra bright flavor, toss the grapes lightly with a squeeze of fresh orange juice before combining. This salad is best served cold.
