  1. Start by thoroughly washing your fresh pineapple. Slice off the top and bottom ends. Stand the pineapple upright on a cutting board and carefully slice away the tough outer skin, following the natural curve of the fruit. Once peeled, cut the pineapple into quarters lengthwise. Remove the tough, woody core from each quarter. Then, cut each quarter into bite-sized chunks, aiming for pieces that are roughly 1-inch square.

  2. In a medium bowl, combine the prepared pineapple chunks. Drizzle the melted coconut oil over the pineapple. If you’re opting for extra sweetness and caramelization, sprinkle the brown sugar evenly over the oiled chunks. Add the ground cinnamon and the pinch of nutmeg (if using). Gently toss everything together with a spoon or your hands to ensure each pineapple chunk is coated with the oil, sugar, and spices.

  3. If your air fryer has a preheat function, set it to 380°F (190°C) and preheat for about 3 minutes. This helps ensure even cooking and better crisping of the pineapple.
  4. Carefully arrange the seasoned pineapple chunks in a single layer in the air fryer basket. It’s crucial not to overcrowd the basket, as this will steam the pineapple instead of air frying it, preventing it from getting nicely caramelized. You may need to cook the pineapple in batches, depending on the size of your air fryer.
  5. Place the basket into the preheated air fryer. Cook for 8-12 minutes, shaking the basket gently halfway through the cooking time (around 4-6 minutes). This tossing helps the pineapple cook evenly and develop caramelization on all sides.
  6. The pineapple is ready when it’s tender to the touch, slightly softened, and has developed beautiful golden-brown edges with caramelized sugars. The exact time will depend on your air fryer model and the size of your pineapple chunks.
  7. Once cooked, carefully remove the pineapple chunks from the air fryer basket. Serve them warm immediately for the best taste and texture.

Notes

Leftover Easy Air Fryer Pineapple Chunks can be stored in an airtight container in the refrigerator for up to 3-4 days. They can be reheated on the stovetop, microwave, or in the air fryer. Freezing is not ideal for texture but possible.
