Ingredients
  

Ground Beef
  • 1 pound ground beef 80/20 recommended for flavor
  • 1 packet taco seasoning or homemade equivalent
  • 1/2 cup water
Salad Base
  • 1 bag Doritos tortilla chips 9-11 ounces, Nacho Cheese or Cool Ranch recommended, crushed
  • 1 head iceberg lettuce shredded
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1 cup diced red onion
  • 1 cup black olives sliced
  • 1/2 cup corn canned or frozen, thawed
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup Catalina dressing or your favorite Catalina-style dressing
Optional Toppings
  • sour cream
  • salsa
  • guacamole
  • jalapeños
  • avocado

Method
 

  1. In a large skillet over medium-high heat, crumble and cook the ground beef until it’s browned and no longer pink. Drain off any excess grease.

  2. Stir in the taco seasoning packet and water. Bring the mixture to a simmer and cook for 5-7 minutes, or until the sauce has thickened, stirring occasionally. Set aside to cool slightly.

  3. In a large serving bowl, combine the shredded iceberg lettuce, shredded cheddar cheese, diced tomatoes, diced red onion, sliced black olives, and corn.

  4. Gently spoon the cooled taco meat over the salad ingredients in the bowl.

  5. Open the bag of Doritos and crush them slightly. You can do this by hand or by gently pressing on the bag. You want a good mix of larger pieces and smaller crumbs for maximum crunch.

  6. Just before serving, sprinkle the crushed Doritos over the salad. Drizzle the Catalina dressing evenly over the top.

  7. Gently toss all the ingredients together until everything is well combined. Serve immediately to ensure the Doritos stay crisp. Garnish with fresh cilantro and any other desired optional toppings.
