Ingredients

  • 1 pound large shrimp peeled and deveined, tails on or off
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 0.5 teaspoon red pepper flakes adjust to your spice preference
  • 0.5 cup dry white wine like Pinot Grigio or Sauvignon Blanc
  • 1 (14.5 ounce) can diced tomatoes undrained
  • 0.5 cup heavy cream
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons fresh basil chopped
  • 1 tablespoon fresh parsley chopped
  • salt and freshly ground black pepper to taste
  • Cooked pasta, crusty bread, or rice for serving

Equipment

  • Large skillet
  • Paper towels
  • Wooden spoon

Method

  1. Begin by ensuring your shrimp are properly peeled and deveined. If using frozen shrimp, thaw them completely according to package directions. Pat the shrimp dry with paper towels; this is a crucial step for achieving a beautiful sear. Season them generously with salt and freshly ground black pepper.
1 pound large shrimp, salt and freshly ground black pepper
  2. In a large skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, add the minced garlic and red pepper flakes. Sauté for about 1 minute, stirring constantly, until fragrant. Be careful not to burn the garlic, as this can impart a bitter taste.
2 tablespoons olive oil, 4 cloves garlic, 0.5 teaspoon red pepper flakes
  3. Add the seasoned shrimp to the hot skillet in a single layer. Cook for 1-2 minutes per side, just until they turn pink and opaque. Avoid overcrowding the pan; cook in batches if necessary to ensure proper searing. Remove the cooked shrimp from the skillet and set them aside on a plate.

  4. Pour the white wine into the same skillet. Increase the heat to high and scrape the bottom of the pan with a wooden spoon to loosen any browned bits left from cooking the shrimp. Let the wine simmer and reduce by about half, which should take 2-3 minutes. This process adds a wonderful depth of flavor.
    0.5 cup dry white wine
  5. Stir in the can of diced tomatoes (including their juice) into the skillet. Bring the mixture to a simmer and cook for about 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.

  6. Reduce the heat to medium-low. Pour in the heavy cream and stir to combine. Continue to simmer gently for another 3-4 minutes, or until the sauce has thickened to your desired consistency. Stir in the grated Parmesan cheese until it's fully melted and incorporated into the creamy sauce.
0.5 cup heavy cream, 0.25 cup grated Parmesan cheese
  7. Add the cooked shrimp back into the skillet with the sauce. Stir gently to coat the shrimp evenly. Let the shrimp warm through in the sauce for about 1-2 minutes. Do not overcook the shrimp at this stage, as they can become tough.
