- In a medium-sized mixing bowl, add the creamy peanut butter (or your chosen nut butter), honey (or maple syrup), and vanilla extract. - Using a sturdy spoon or a spatula, mix all the ingredients together until everything is evenly distributed. The mixture might seem a little crumbly at first, but keep mixing until it starts to come together. You may need to use your hands to fully incorporate everything, ensuring no dry pockets remain. The consistency should be sticky enough to hold its shape.
- For easier handling and shaping, cover the bowl with plastic wrap and refrigerate the mixture for about 15–20 minutes. This will firm up the ingredients, making it less sticky and easier to roll.
- Once the mixture has chilled (or if you’re going straight to rolling), scoop out about 1 tablespoon of the mixture at a time. Roll it between your palms to form small, compact balls, approximately 1 inch in diameter. Continue this process until all the mixture has been used.
- Your Delicious No Bake Energy Balls are ready to be enjoyed immediately! For the best texture, you can let them sit at room temperature for a few minutes before indulging.
Notes
Best stored in an airtight container in the refrigerator. They will stay fresh for up to 7–10 days. Can be frozen for longer storage (up to 2-3 months). No reheating necessary.
