  • 1 pound ground chicken

  • 2 cloves garlic, minced
  • 1/4 teaspoon ground ginger
  • 1/4 cup soy sauce low-sodium recommended
  • 1/4 cup orange juice freshly squeezed or 100% juice
  • 2 tablespoons brown sugar packed
  • 1 tablespoon white vinegar
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Method
 

  1. Heat the olive oil in a large skillet or wok over medium-high heat. Add the ground chicken and break it apart with a spoon. Cook, stirring occasionally, until the chicken is browned and no longer pink, about 5-7 minutes. Drain off any excess grease.

  2. Add the chopped yellow onion to the skillet with the browned chicken. Cook, stirring, until the onion softens, about 2-3 minutes. Stir in the minced garlic and ground ginger and cook for another minute until fragrant.

  3. In a small bowl, whisk together the soy sauce, orange juice, brown sugar, and white vinegar until the sugar is dissolved.

  4. In a separate small bowl, whisk together the cornstarch and water to create a cornstarch slurry. This will help thicken our glorious orange sauce.

  5. Pour the prepared sauce mixture into the skillet with the chicken and onions. Bring the mixture to a simmer, stirring constantly. Once simmering, gradually whisk in the cornstarch slurry. Continue to cook, stirring, until the sauce thickens to your desired consistency, about 1-2 minutes. It should coat the back of a spoon beautifully.
