- Prepare the cucumber slices: Wash and trim the ends of the two English cucumbers. Slice them into uniform rounds approximately 1/2 inch thick. Pat them dry lightly with paper towels to prevent sogginess.
- Make the smoked salmon spread: In a medium bowl, combine the softened cream cheese, finely diced smoked salmon, chopped fresh dill, lemon juice, and black pepper.
- Mix the spread thoroughly until all ingredients are evenly incorporated and the mixture is smooth but textured.
- Assemble the bites: Using a small spoon or a piping bag fitted with a star tip (optional), top each cucumber round generously with the smoked salmon cream cheese mixture.
- Garnish and serve: Immediately sprinkle the tops of the cream cheese mounds evenly with the Everything Bagel Seasoning.
- Serve the cucumber bites immediately for the best texture, or chill for up to 30 minutes before serving. Do not assemble too far in advance as cucumbers release moisture.
Notes
For an extra kick, add a small dash of hot sauce to the cream cheese mixture. These bites are best made and served the same day.
