Ingredients

  • 2 pounds fresh peaches pitted and sliced (about 6-8 medium peaches)
  • 1/4 cup maple syrup plus more for drizzling
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 cup almond flour
  • 1/2 cup rolled oats certified gluten-free if necessary
  • 1/4 cup chopped almonds optional, for added crunch
  • 1/3 cup melted coconut oil or unsalted butter (for a non-fasting version, use grass-fed if preferred)
  • pinch sea salt

Equipment

  • Oven
  • 8x8 inch baking dish
  • Large bowl
  • Medium Bowl

Method

  1. Preheat your oven to 375°F (190°C). If you're using fresh peaches, wash them, remove the pits, and slice them into 1/2-inch thick wedges.
    2 pounds fresh peaches
  2. In a large bowl, gently toss the sliced peaches with 1/4 cup of maple syrup, lemon juice, cinnamon, nutmeg, and ginger. Ensure the peaches are evenly coated with the spices and sweetener.
2 pounds fresh peaches, 1/4 cup maple syrup, 1 tablespoon lemon juice, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground ginger
  3. Pour the seasoned peach mixture into a greased 8x8 inch baking dish, spreading them out into an even layer.
2 pounds fresh peaches, 1/4 cup maple syrup, 1 tablespoon lemon juice, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground ginger
  4. In a separate medium bowl, combine the almond flour, rolled oats, and chopped almonds (if using). Add a pinch of sea salt to enhance the flavors.
1 cup almond flour, 1/2 cup rolled oats, 1/4 cup chopped almonds, pinch sea salt
  5. Pour the melted coconut oil (or butter for a non-fasting version) over the dry ingredients. Stir until everything is well combined and a crumbly dough forms. Be careful not to overmix.
1 cup almond flour, 1/2 cup rolled oats, 1/4 cup chopped almonds, 1/3 cup melted coconut oil, pinch sea salt
  6. Evenly sprinkle the oat and almond flour mixture over the top of the peaches in the baking dish. You want to create a cohesive layer, but don't press it down too firmly.
2 pounds fresh peaches, 1/4 cup maple syrup, 1 tablespoon lemon juice, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground ginger, 1 cup almond flour, 1/2 cup rolled oats, 1/4 cup chopped almonds, pinch sea salt
  7. Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the peach filling is bubbly around the edges.
  8. Let the Daniel Fast Dessert Peach Cobbler cool for at least 10 minutes before serving. This allows the flavors to meld and the filling to thicken slightly.
