Ingredients

Cucumbers
  • 2 large cucumbers chilled
Creamy Dill Dressing
  • 1/4 cup plain Greek yogurt or dairy-free alternative
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon finely chopped fresh dill
  • 1/2 teaspoon garlic powder
  • salt to taste
  • freshly ground black pepper to taste
Optional Toppings
  • 1/4 cup cherry tomatoes halved
  • 1/4 cup crumbled feta cheese or dairy-free alternative
  • 2 tablespoons Kalamata olives sliced
  • 1 tablespoon toasted sunflower seeds
  • extra virgin olive oil for drizzling
  • fresh parsley chopped, for garnish

Equipment

  • Small Bowl
  • Spoon
  • Serving plate or individual bowls

Method

  1. Wash the cucumbers thoroughly. If they have a thick skin, you may wish to peel them, or leave the skin on for added texture and nutrients. Slice off both ends of each cucumber. You can either slice them into rounds about 1/2 inch thick, or for a more substantial "bowl," slice them lengthwise in half and then scoop out the seeds with a spoon to create a hollowed-out cavity.

  2. In a small bowl, combine the Greek yogurt (or your chosen alternative), fresh lemon juice, finely chopped dill, and garlic powder. Stir well until all ingredients are thoroughly incorporated and the dressing is smooth and creamy.
1/4 cup plain Greek yogurt, 1 tablespoon fresh lemon juice, 1 teaspoon finely chopped fresh dill, 1/2 teaspoon garlic powder
  3. Season the dressing with salt and freshly ground black pepper to your personal taste. Start with a small amount and add more as needed. The dill and lemon should create a bright, herbaceous flavor profile.

  5. Generously spoon or drizzle the creamy dill dressing over the cucumber slices or into the hollowed cucumber halves. Ensure each piece is well-coated for maximum flavor.
  6. Now for the fun part! Scatter your chosen optional toppings over the dressed cucumbers. This could include vibrant cherry tomatoes, salty feta cheese, briny Kalamata olives, or crunchy toasted sunflower seeds.

  7. Finish with a light drizzle of extra virgin olive oil and a sprinkle of fresh chopped parsley for a pop of color and extra freshness. Serve your Cucumber Snack Bowl immediately and enjoy its refreshing goodness.

Notes

Leftover Cucumber Snack Bowl components can be stored separately to maintain optimal freshness and texture. This dish is best served chilled and is not suitable for reheating. To enjoy leftovers, simply reassemble your Cucumber Snack Bowl by placing fresh cucumber slices or halves in a bowl, dressing them with the chilled dressing, and adding your desired toppings.
