- Prepare the vegetables. Slice the cucumbers into half-moons or dice them into bite-sized pieces, depending on preference. Thinly slice the red onion and roughly chop the fresh dill.
- In a small bowl, whisk together all the dressing ingredients: Greek yogurt, apple cider vinegar, 1.5 tablespoons of Everything Bagel Seasoning, Dijon mustard, salt, and pepper until smooth and well combined.
- In a large mixing bowl, combine the sliced cucumbers, red onion, and chopped dill.
- Pour the prepared dressing over the vegetable mixture. Gently toss everything together until the cucumbers and onions are evenly coated with the creamy dressing.
- Taste the salad and adjust seasoning if necessary, adding more salt or a pinch more Everything Bagel Seasoning if desired.
- Chill the salad in the refrigerator for at least 10 minutes to allow the flavors to meld. Just before serving, garnish with an extra sprinkle of Everything Bagel Seasoning.
Notes
This salad is best served cold. If making ahead, you may want to reserve a small amount of dressing and toss right before serving to prevent the cucumbers from releasing too much water.
