  • 1/4 cup finely diced celery
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons chopped fresh dill or 1 teaspoon dried dill

Method
 

  1. Wash the cucumbers thoroughly. Using a mandolin slicer or a very sharp knife, thinly slice the cucumbers lengthwise into long, flat ribbons. Aim for slices about 1/8-inch thick. If they are too thick, it will be difficult to roll them. Lay these cucumber ribbons flat on a paper towel-lined plate or baking sheet, and gently pat them dry. This step is crucial to prevent the roll-ups from becoming watery.

  2. In a medium-sized bowl, combine the shredded cooked chicken, mayonnaise, Greek yogurt (if using), Dijon mustard, and fresh lemon juice. Stir everything together until well combined and the chicken is evenly coated.
