  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 (24 ounce) jar marinara sauce (or your favorite pasta sauce)
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • salt and freshly ground black pepper to taste
  • 8 ounces fresh mozzarella cheese, thinly sliced or shredded
  • ¼ cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)
  • Cooked pasta or crusty bread for serving

Method
 

  1. Generously season the chicken breasts or thighs with salt and freshly ground black pepper.

  2. Place the seasoned chicken in the bottom of your slow cooker.

  3. Sprinkle the dried Italian seasoning, garlic powder, and onion powder evenly over the chicken.

  4. Pour the entire jar of marinara sauce over the chicken, ensuring it’s mostly covered.

  5. Cover the slow cooker and cook on HIGH for 3-4 hours, or on LOW for 5-6 hours, until the chicken is cooked through and tender. The cooking time may vary slightly depending on your slow cooker's model and the size of your chicken pieces.
  6. About 15-20 minutes before serving, remove the lid from the slow cooker. Arrange the slices or shredded mozzarella cheese evenly over the chicken and sauce. Sprinkle the grated Parmesan cheese on top of the mozzarella.

  7. Replace the lid and continue to cook until the cheese is melted and bubbly.
  8. Carefully remove the chicken from the slow cooker. You can shred it with two forks directly in the sauce, or serve the chicken breasts whole. Serve immediately over your favorite cooked pasta or with crusty bread for dipping. Garnish with fresh basil leaves, if desired.
