Ingredients
  

  • 1.5 pounds lean ground turkey
  • 1 large yellow onion chopped
  • 2 bell peppers any color desired, e.g., red, green, yellow, chopped
  • 2 cloves garlic minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can diced tomatoes undrained
  • 1 cup low-sodium chicken broth or turkey broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper optional, for a touch of heat

Method
 

  1. Heat a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.

  2. Add the chopped yellow onion and bell peppers to the same skillet. Cook for 5-7 minutes, or until the vegetables begin to soften. Add the minced garlic and cook for an additional minute until fragrant.

  3. Transfer the browned turkey and sautéed vegetables to your slow cooker.
  4. Pour in the crushed tomatoes and diced tomatoes (with their juice). Add the chicken or turkey broth.
