Method

  1. Begin by cutting your boneless, skinless chicken thighs or breasts into uniform, bite-sized pieces. This ensures even cooking and makes the chicken easier to eat once it's done. Place the chicken pieces directly into your slow cooker.
1.5 pounds boneless, skinless chicken thighs or breasts
  2. In a medium bowl, whisk together the chicken broth, bourbon, soy sauce, packed brown sugar, ketchup, and Worcestershire sauce. This mixture forms the base of our delicious bourbon sauce.
1 cup chicken broth, 1/2 cup bourbon, 1/4 cup soy sauce, 1/4 cup packed brown sugar, 2 tablespoons ketchup, 1 tablespoon Worcestershire sauce
  3. To the bowl with the wet ingredients, add the garlic powder and ground ginger. Whisk everything together until well combined and the brown sugar has started to dissolve.
1 teaspoon garlic powder, 1/2 teaspoon ground ginger
  4. Carefully pour the combined sauce mixture over the chicken pieces in the slow cooker. Ensure the chicken is mostly submerged in the liquid.
1.5 pounds boneless, skinless chicken thighs or breasts
  5. Cover the slow cooker with its lid. Cook on the LOW setting for 6 to 7 hours, or on the HIGH setting for 3 to 4 hours, until the chicken is cooked through and tender. The exact cooking time may vary slightly depending on your slow cooker model.
  6. Once the chicken is cooked, remove the lid from the slow cooker. In a small bowl, whisk together the cornstarch and cold water until smooth, creating a slurry.
1 tablespoon cornstarch, 2 tablespoons cold water
  7. Turn the slow cooker to the HIGH setting (if it wasn't already there). Stir the cornstarch slurry into the liquid in the slow cooker. Stir well to distribute the slurry evenly.
1 tablespoon cornstarch, 2 tablespoons cold water
  8. Let the sauce simmer uncovered in the slow cooker for about 15-20 minutes, or until it has thickened to your desired consistency. Stir occasionally to prevent sticking.
  9. Your Crock Pot Bourbon Chicken is now ready to be served! It's fantastic served hot over fluffy white or brown rice. Garnish with toasted sesame seeds and freshly chopped green onions for extra flavor and visual appeal.
