Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
  2. In a microwave-safe bowl, combine ½ cup of the shredded mozzarella cheese and the softened cream cheese. Microwave in 30-second intervals, stirring in between, until both cheeses are completely melted and smooth. This usually takes about 1 to 1.5 minutes. Be careful not to overheat.

  3. In a separate medium bowl, whisk together the blanched almond flour, baking powder, garlic powder, onion powder, and salt.

  4. Add the melted cheese mixture to the dry ingredients. Add the large egg. Mix everything together with a spatula or your hands until a cohesive dough forms. It might seem a little sticky, but it should hold together. If it's too wet, you can add a touch more almond flour, about a tablespoon at a time.

  5. Divide the dough into about 12 equal portions. Roll each portion into a small ball, roughly 1-inch in diameter. You can lightly wet your hands if the dough feels too sticky to handle.
  6. Place the remaining ¼ cup of shredded mozzarella cheese in a shallow bowl. Gently roll each dough ball in the cheese, ensuring it's evenly coated. This will provide a wonderfully crispy, cheesy exterior when baked.

  8. Place the shaped and coated bagel bites onto the prepared baking sheet. Bake for 12-15 minutes, or until they are puffed up, golden brown, and firm to the touch. The cheese should be melted and lightly browned.
