  • 1 pre-cooked Costco Rotisserie Chicken shredded, about 3-4 cups
Pasta
  • 8 ounces penne pasta or your favorite shape
Sauce Ingredients
  • 1 tablespoon olive oil
  • 1/2 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese plus more for serving
  • 1 teaspoon dried Italian seasoning
  • salt and freshly ground black pepper to taste
  • 1/4 cup chopped fresh spinach optional, for added color and nutrition

Method
 

  1. Shred the meat from your Costco Rotisserie Chicken, discarding the skin and bones. You should aim for about 3-4 cups of shredded chicken. Cook the penne pasta according to package directions until al dente. Drain the pasta and set aside, reserving about 1 cup of the pasta water.

  2. While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium heat. Add the chopped yellow onion and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.

  3. Stir in the undrained can of diced tomatoes, heavy cream, grated Parmesan cheese, and dried Italian seasoning. Bring the mixture to a simmer, stirring occasionally. Season with salt and freshly ground black pepper to your taste. Let it simmer gently for about 5 minutes to allow the flavors to meld and the sauce to thicken slightly.

  4. Add the shredded rotisserie chicken to the simmering sauce. Stir well to coat the chicken evenly. If the sauce seems too thick, add a splash of the reserved pasta water to reach your desired consistency.

  5. Add the cooked and drained penne pasta to the skillet with the chicken and sauce. Toss gently to combine everything thoroughly, ensuring all the pasta is coated in the creamy sauce. If using, stir in the fresh spinach and cook for another minute or two until it has wilted.
