- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no pink remains. Drain off any excess grease.1 tablespoon olive oil or avocado oil, 1 pound ground beef (80/20 or 90/10 recommended)

- Stir in the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it. Then, add the chili powder, cumin, smoked paprika, and cayenne pepper (if using). - Pour in the undrained Rotel diced tomatoes and green chilies, and the undrained diced tomatoes. Add the chicken or beef broth. - Bring the soup to a simmer, then reduce the heat to low, cover, and let it cook for at least 15-20 minutes to allow the flavors to meld.
- Uncover the pot and stir in the full-fat coconut milk. Stir until the soup is well combined and has a creamy consistency. If you want it extra thick and creamy, you can use only the solid cream from a chilled can of coconut milk.1 (10-ounce) can full-fat coconut milk (from a can, chilled and only the thick cream scooped out if making it extra creamy, otherwise use the full can)

Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Freeze for up to 2-3 months. Reheat gently on the stovetop, avoid boiling.
