- In a medium-sized bowl, add the crumbled feta cheese. If your feta is in a block, crumble it evenly using your fingers or a fork. Set aside.8 ounces feta cheese, crumbled
- Ensure your cream cheese has been left out at room temperature for at least 30 minutes to an hour. This will make it much easier to blend smoothly. Place the softened cream cheese into the same bowl as the feta.4 ounces cream cheese, softened, 8 ounces feta cheese, crumbled
- Drizzle in the 2 tablespoons of extra virgin olive oil, add the minced garlic clove, and pour in the fresh lemon juice.2 tablespoons extra virgin olive oil, 1 clove garlic, minced, 1 tablespoon fresh lemon juice
- Using a food processor or a sturdy whisk, begin to blend the ingredients together. If using a food processor, pulse until the mixture begins to come together. If using a whisk, vigorously stir and mash the ingredients until they start to combine into a cohesive spread.
- Add the chopped fresh dill and parsley to the mixture. If you like a little heat, sprinkle in the pinch of red pepper flakes.2 tablespoons fresh dill, chopped, 1 tablespoon fresh parsley, chopped, 1 pinch red pepper flakes
- Continue processing or whisking until the dip is exceptionally creamy and well-combined, with the herbs evenly distributed. Scrape down the sides of the bowl as needed. Taste and season with salt and freshly ground black pepper. Feta cheese is salty, so you may not need much salt, if any. - Transfer the Creamy Feta Dip to a serving bowl. Drizzle a little extra virgin olive oil over the top and garnish with extra fresh dill and parsley. Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Remove from the refrigerator 15-20 minutes before serving to soften. Reheating is not recommended.
