Method
- In a jar, container, or bowl with a lid, add the rolled oats, milk, Greek yogurt, chia seeds, maple syrup (or honey), vanilla extract, and salt.1/2 cup rolled oats, 1 cup milk, 2 tablespoons Greek yogurt, 1 tablespoon chia seeds, 1 tablespoon maple syrup or honey, 1/2 teaspoon vanilla extract, 1/4 teaspoon salt
- Stir all the ingredients together until well combined. Ensure there are no clumps of chia seeds or oats stuck at the bottom. This thorough mixing is key to achieving a creamy texture and distributing all the flavors evenly.
- Gently fold in the chocolate chips. Reserve a few to sprinkle on top as a garnish if desired.2 tablespoons chocolate chips
- Cover the container tightly with a lid or plastic wrap. Place it in the refrigerator for at least 4-6 hours, or preferably overnight. This allows the oats and chia seeds to absorb the liquid, thicken, and develop their creamy, cookie-dough-like consistency.
- In the morning, stir the overnight oats. If they are too thick for your liking, add a splash more milk. Spoon into a bowl or enjoy straight from the container. Add your desired toppings like extra chocolate chips, a swirl of nut butter, or a sprinkle of cinnamon.
Notes
Can be stored in an airtight container in the refrigerator for up to 3-4 days. Best served cold.
