Ingredients

  • 1/2 cup rolled oats old-fashioned oats are best for texture
  • 1 cup milk dairy or non-dairy like almond, soy, or oat milk
  • 2 tablespoons Greek yogurt plain or vanilla, for extra creaminess
  • 1 tablespoon chia seeds for thickening and added nutrients
  • 1 tablespoon maple syrup or honey adjust to your sweetness preference
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons chocolate chips mini chocolate chips are ideal
Optional toppings

Equipment

  • Jar, container, or bowl with a lid

Method

  1. In a jar, container, or bowl with a lid, add the rolled oats, milk, Greek yogurt, chia seeds, maple syrup (or honey), vanilla extract, and salt.
1/2 cup rolled oats, 1 cup milk, 2 tablespoons Greek yogurt, 1 tablespoon chia seeds, 1 tablespoon maple syrup or honey, 1/2 teaspoon vanilla extract, 1/4 teaspoon salt
  2. Stir all the ingredients together until well combined. Ensure there are no clumps of chia seeds or oats stuck at the bottom. This thorough mixing is key to achieving a creamy texture and distributing all the flavors evenly.
  3. Gently fold in the chocolate chips. Reserve a few to sprinkle on top as a garnish if desired.
    2 tablespoons chocolate chips
  4. Cover the container tightly with a lid or plastic wrap. Place it in the refrigerator for at least 4-6 hours, or preferably overnight. This allows the oats and chia seeds to absorb the liquid, thicken, and develop their creamy, cookie-dough-like consistency.
  5. In the morning, stir the overnight oats. If they are too thick for your liking, add a splash more milk. Spoon into a bowl or enjoy straight from the container. Add your desired toppings like extra chocolate chips, a swirl of nut butter, or a sprinkle of cinnamon.

Notes

Can be stored in an airtight container in the refrigerator for up to 3-4 days. Best served cold.
