Ingredients
  

  • 1 pound boneless, skinless chicken breasts or thighs cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 medium yellow onion finely chopped
  • 1 green bell pepper finely chopped
  • 1 red bell pepper finely chopped
  • 3 cloves garlic minced
  • 1 teaspoon Cajun seasoning adjust to your spice preference
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper optional, for extra heat
  • salt and freshly ground black pepper to taste
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1/2 cup heavy cream
  • 1/2 cup milk whole or 2%
  • 1/4 cup grated Parmesan cheese
  • 1 (15 ounce) can diced tomatoes undrained
  • 8 ounces spaghetti cooked according to package directions and drained

Method
 

  1. Season the chicken pieces generously with salt, pepper, and half of the Cajun seasoning. Ensure each piece is well-coated.

  2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside on a plate.

  3. In the same skillet, add the chopped onion and bell peppers. Cook, stirring occasionally, until softened, about 5-7 minutes.

  4. Add the minced garlic, remaining Cajun seasoning, smoked paprika, and cayenne pepper (if using) to the skillet with the vegetables. Cook for about 1 minute more, stirring constantly, until fragrant. This step helps to toast the spices and release their full flavor.

  5. Pour in the condensed cream of mushroom soup, heavy cream, and milk. Stir well to combine with the vegetables and spices. Bring the mixture to a gentle simmer.

  6. Stir in the grated Parmesan cheese until it’s melted and the sauce is smooth. Add the can of diced tomatoes (with their juice), stirring to distribute evenly.

  7. Add the cooked chicken back into the skillet with the sauce. Stir to coat the chicken. Let the sauce simmer gently for about 5-10 minutes, allowing the flavors to meld and the sauce to thicken slightly. Season with additional salt and pepper to taste if needed.

  8. Add the cooked and drained spaghetti directly to the skillet with the creamy Cajun sauce and chicken. Toss gently until the spaghetti is evenly coated with the rich sauce.

Notes

Allow the dish to cool completely before storing. The dish can be stored in an airtight container in the refrigerator for 3-4 days. For freezing, it's best to do so before adding the pasta, or freeze the sauce and chicken mixture separately. The assembled dish can be frozen for up to 2-3 months.
