  • 1 cup Powdered Sugar Sifted
  • 20 ounces Crushed Pineapple Well-drained
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Shredded Coconut Sweetened, optional for mixing
Optional Topping
  • 1/2 cup Chopped Pecans Toasted
  • 2 tablespoons Maraschino Cherry Juice For drizzling

Instructions
  1. In a large mixing bowl, beat the softened cream cheese until light and fluffy using an electric mixer. This usually takes about 2-3 minutes.
  2. Gradually add the sifted powdered sugar to the cream cheese mixture, beating well after each addition until fully incorporated and smooth.
  3. Stir in the vanilla extract and the well-drained crushed pineapple. Mix gently until just combined, being careful not to overmix once the pineapple is added.
  4. Fold in the shredded coconut, if using. Taste the dip and adjust sweetness if necessary (add a touch more powdered sugar if desired).
  5. Transfer the dip to your desired serving bowl. Cover and chill in the refrigerator for at least 30 minutes to allow the flavors to meld and the dip to firm up slightly.
  6. Before serving, garnish the top of the dip with toasted chopped pecans and drizzle lightly with maraschino cherry juice for color and extra flavor.

Notes

Ensure the pineapple is very well drained to prevent the dip from becoming too watery. Serve chilled with crisp graham crackers, vanilla wafers, or fruit slices like apple wedges and strawberries.
