- Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with cooking spray or butter. Spread the frozen Tater Tots in a single layer on the bottom of the prepared baking dish. You don't need to thaw them; they'll cook perfectly from frozen.1 pound frozen Tater Tots
- In a large skillet over medium heat, cook the breakfast sausage, breaking it up with a spoon, until browned and cooked through. If your sausage is particularly fatty, you may want to drain some of the excess grease. Add the finely chopped yellow onion to the skillet with the sausage and cook until softened and translucent, about 5-7 minutes. - Carefully pour the egg mixture evenly over the shredded cheese, distributing it throughout the baking dish. Gently sprinkle the chopped fresh chives and chopped cooked bacon over the top of the casserole. - Place the baking dish in the preheated oven. Bake for 40-45 minutes, or until the casserole is set, the eggs are cooked through, and the Tater Tots are golden brown and crispy. You can check for doneness by inserting a knife into the center; it should come out clean.
- Once baked, remove the casserole from the oven and let it rest for about 5-10 minutes before serving. This allows the casserole to set up properly, making it easier to slice and serve. Serve hot with your favorite breakfast sides or enjoy it on its own.
