Ingredients
  

  • 2 (15 ounce) cans sweet corn drained and rinsed
  • 1 (10 ounce) can diced tomatoes and green chilies undrained
  • 1 (8 ounce) package cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/3 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • to taste salt
  • to taste freshly ground black pepper

  • Medium-sized baking dish (8x8 inch)

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a medium-sized baking dish (an 8x8 inch or similar will work perfectly) with cooking spray or butter.
  2. In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Stir these ingredients together until they are thoroughly blended and form a smooth, creamy base for your dip.

  3. To the creamy base, add the drained and rinsed sweet corn and the undrained can of diced tomatoes and green chilies.

  4. Stir in the shredded cheddar cheese, chopped fresh cilantro, garlic powder, and onion powder. Mix everything until it’s well combined. Taste the mixture at this stage and season with salt and freshly ground black pepper as needed.

  5. Spoon the entire mixture into your prepared baking dish and spread it out evenly.
  6. Place the baking dish in the preheated oven. Bake for 20-25 minutes, or until the dip is hot, bubbly, and the cheese on top is melted and slightly golden.
  7. Once baked, carefully remove the Crack Corn Dip from the oven. Let it rest for about 5 minutes before serving.

Notes

Best enjoyed hot with dippers like tortilla chips, pita bread, crackers, or fresh vegetable sticks.
