Servings: 12 sliders
Course: Breakfast, Brunch

Ingredients

  • 12 slider buns (such as Hawaiian sweet rolls or dinner rolls)
  • 1 pound breakfast sausage (mild or spicy)
  • 8 large eggs
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
  • 1/4 cup finely chopped cooked bacon optional, for extra indulgence
  • 2 tablespoons butter
  • 1 tablespoon chopped fresh chives or parsley for garnish (optional)

Equipment

  • Skillet
  • Baking Sheet
  • Oven

Method

  1. In a large skillet over medium heat, cook the breakfast sausage, breaking it up with a spoon, until it's fully browned and cooked through. Drain off any excess grease and set the cooked sausage aside.
1 pound breakfast sausage (mild or spicy)
  2. While the sausage is cooking, whisk together the eggs, milk, salt, and pepper in a medium bowl until well combined.
8 large eggs, 1/2 cup milk, 1/4 teaspoon salt, 1/4 teaspoon black pepper
  3. Melt the butter in the same skillet used for the sausage over medium-low heat. Pour the egg mixture evenly into the skillet. Cook, stirring occasionally, until the eggs are just set and no longer liquid. Be careful not to overcook them, as they will continue to cook slightly when assembled.
2 tablespoons butter, 8 large eggs, 1/2 cup milk, 1/4 teaspoon salt, 1/4 teaspoon black pepper
  4. Slice the slider buns in half horizontally. Place the bottom halves of the buns on a baking sheet.

Notes

Once cooled completely, store any leftover Crack Breakfast Sliders in an airtight container in the refrigerator. They will keep well for up to 2-3 days. Reheat in the oven at 300°F (150°C) for 7-10 minutes, or microwave individual sliders on 50% power for 30-60 seconds.
