Method
 

  1. In a small saucepan, combine the milk, unsweetened cocoa powder, granulated sugar, red food coloring, vanilla extract, almond extract (if using), cinnamon, and salt. Whisk these ingredients together until the cocoa powder is fully incorporated and there are no lumps.

  2. Place the saucepan over medium-low heat. Stir continuously with a whisk to ensure the mixture doesn't scorch at the bottom. Heat the milk until it is hot to the touch but not boiling. Aim for a gentle simmer around the edges. This process allows the flavors to meld beautifully (about 3-5 minutes).
  3. While the milk mixture is heating, brew your shot of espresso or prepare your strong coffee. If you don't have an espresso machine, a Moka pot or very strong instant coffee will work.

  4. Once the milk mixture is hot and the flavors have infused, carefully pour it into a blender. You can also use an immersion blender directly in the saucepan, but be cautious of splashing. Blend on high speed for about 30-60 seconds. This step is crucial for creating that signature frothy, velvety latte texture. The rapid blending will aerate the milk and emulsify the cocoa beautifully.
  5. Pour your freshly brewed espresso (or strong coffee) into your favorite mug.
