  • 1 cup Low-fat cottage cheese Drained slightly
  • 1/4 tsp Garlic powder
  • 1/2 tsp Dried oregano
  • 1/4 cup Low-sugar pizza sauce Or marinara sauce
  • 1/4 cup Shredded part-skim mozzarella cheese
  • 3 slices Turkey pepperoni Or preferred pizza topping
  • 3 tsp Italian seasoning For topping

  1. Preheat your oven or air fryer to 375°F (190°C). Lightly grease a small, oven-safe bowl or ramekin.
  2. Prepare the cottage cheese base: Combine the drained cottage cheese, garlic powder, and 1/4 tsp of the dried oregano in a personal blender or food processor. Blend until completely smooth and creamy, resembling a ricotta texture.
  3. Spread the smooth cottage cheese mixture evenly into the bottom of the prepared oven-safe bowl, creating a smooth 'crust' layer.
  4. Top the cottage cheese base with the pizza sauce, ensuring even coverage. Then sprinkle the mozzarella cheese evenly over the sauce.
  5. Arrange the pepperoni slices (or other desired toppings) on top of the cheese layer.
  6. Bake for 12-15 minutes, or until the cheese is melted, bubbly, and just starting to brown slightly around the edges. If using an air fryer, cook for 8-10 minutes.
  7. Carefully remove the bowl from the oven. Sprinkle with the remaining Italian seasoning before serving immediately.

Notes

This recipe is extremely versatile. Feel free to substitute toppings like cooked spinach, mushrooms, or diced bell peppers. Ensure the cottage cheese is blended very smooth for the best texture.
