Method
- If your cottage cheese seems a bit watery, gently drain off any excess liquid. For an ultra-smooth mousse, you can press the cottage cheese through a fine-mesh sieve, but this step is optional and can be skipped if you prefer a slightly more rustic texture.1 cup full-fat cottage cheese
- In a blender or food processor, combine the drained cottage cheese, Greek yogurt, fresh lemon juice, honey or maple syrup, lemon zest, vanilla extract, and a pinch of salt.1 cup full-fat cottage cheese, 1/4 cup Greek yogurt, 1/4 cup fresh lemon juice, 2 tablespoons honey or maple syrup, 1 teaspoon lemon zest, 1/2 teaspoon vanilla extract, Pinch salt
- Blend the ingredients until the mixture is completely smooth and creamy, with no lumps of cottage cheese remaining. This may take 1-2 minutes of blending, scraping down the sides of the blender as needed to ensure everything is incorporated uniformly. Taste and adjust sweetness if necessary, adding a touch more honey or maple syrup if desired.
- Pour the mousse mixture into individual serving glasses, small bowls, or ramekins. Cover each serving tightly with plastic wrap, pressing the wrap directly onto the surface of the mousse to prevent a skin from forming.
- Place the covered servings in the refrigerator and chill for at least 2 hours, or until the mousse is firm and well-set. This chilling time allows the flavors to meld and the texture to develop.
Notes
Properly storing your Cottage Cheese Lemon Mousse Light Zesty is key to enjoying its freshness. Once prepared, spoon the mousse into airtight containers or individual serving dishes, then cover them tightly with plastic wrap, ensuring the wrap touches the surface of the mousse to prevent oxidation. Refrigerate immediately. The mousse will stay fresh and delicious in the refrigerator for up to 3-4 days. While reheating is generally not recommended as it can alter the texture, you can enjoy it chilled straight from the refrigerator. Freezing is also not ideal for this particular recipe as the texture can become watery upon thawing. Therefore, it’s best enjoyed fresh within a few days of preparation.
