Ingredients

Cottage Cheese Egg Flatbread Base
  • 1 cup full-fat cottage cheese
  • 2 large eggs
  • 1/4 cup all-purpose flour (or gluten-free blend)
  • 1 tablespoon nutritional yeast (optional, for cheesy flavor)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 pinch black pepper
Optional Toppings
  • avocado
  • smoked salmon
  • cherry tomatoes
  • fresh herbs
  • red pepper flakes
  • hot sauce

Equipment

  • Baking Sheet
  • Parchment paper
  • Mixing bowl
  • Whisk
  • Spoon
  • Spatula

Method

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with cooking spray or line it with parchment paper. This step ensures your flatbread won't stick and makes cleanup a breeze.
    1 cup full-fat cottage cheese
  2. In a medium-sized mixing bowl, combine the cottage cheese and eggs. Use a whisk or a fork to vigorously mix them together until the mixture is smooth and well incorporated. Ensure there are no large lumps of cottage cheese remaining.
    1 cup full-fat cottage cheese
  3. To the wet mixture, add the flour, nutritional yeast (if using), baking powder, salt, and black pepper. Whisk everything together until just combined. Be careful not to overmix, as this can make the flatbread tough. The batter should be thick but pourable.
    1 cup full-fat cottage cheese
  4. Pour the batter onto the prepared baking sheet. Use a spoon or spatula to spread the batter into a round or rectangular shape, aiming for about 1/4-inch thickness. You can create one large flatbread or divide the batter to make two smaller ones.
  5. Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the edges are golden brown and the center is set. The flatbread should look puffed up and slightly firm to the touch.
  6. Once baked, carefully remove the flatbread from the oven. Now’s the fun part! Add your favorite toppings while the flatbread is still warm. Some great choices include sliced avocado, smoked salmon, fresh cherry tomatoes, chopped chives or parsley, and a pinch of red pepper flakes for a little heat.
    1 cup full-fat cottage cheese
  7. Cut the Cottage Cheese Egg Flatbread into slices and serve hot. Enjoy the delicious combination of creamy, eggy, and your favorite flavorful toppings.

Notes

Leftover Cottage Cheese Egg Flatbread can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, use an oven/toaster oven at 350°F (175°C) for 5-8 minutes, a non-stick skillet over medium-low heat, or a microwave for 30-60 seconds. Freezes well; thaw in refrigerator overnight before reheating.
