- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. This prevents the chips from sticking and ensures even baking.

- Stir all the ingredients together until a thick, smooth batter forms. It should have a consistency similar to thick pancake batter. If it seems too thin, you can add another teaspoon of tapioca starch.
- Spoon dollops of the batter onto the prepared baking sheet, leaving about 1-2 inches between each one. Using the back of a spoon or a small spatula, gently spread each dollop into a thin, round shape, about 2-3 inches in diameter. Aim for a consistent thickness to ensure even crisping. The thinner they are, the crispier they will become.
- This is where the fun begins! Sprinkle your desired toppings over the spread-out batter. Everything bagel seasoning is a fantastic choice, adding a burst of flavor and texture. - Place the baking sheet in the preheated oven. Bake for 20-25 minutes, or until the edges are golden brown and the chips are firm and crisp. Keep an eye on them during the last few minutes, as they can go from perfectly crisp to burnt quickly.
- Once baked, carefully remove the baking sheet from the oven. Let the cottage cheese chips cool completely on the baking sheet. As they cool, they will become even crispier. Once cooled, gently peel them off the parchment paper.
Notes
Store completely cooled chips in an airtight container at room temperature for up to 3-4 days. Reheat in a low oven (approx. 250°F/120°C) for 5-10 minutes if they lose crunch. Freezing is not recommended.
