- In a medium mixing bowl, add the full-fat cottage cheese and the large egg.1 cup (240g) full-fat cottage cheese, 1 large egg
- Using a whisk or an electric mixer on low speed, blend the cottage cheese and egg together until the mixture is as smooth and lump-free as possible. The goal is to achieve a creamy, homogenous base for your chips.
- Add the nutritional yeast, garlic powder, onion powder, and salt to the cottage cheese mixture. - Stir all the ingredients together until they are well combined. The nutritional yeast helps with both the flavor and the crisping process, so ensure it's evenly distributed.
- Dollop spoonfuls of the cottage cheese mixture onto the prepared baking sheet. Aim for about 2 tablespoons per dollop, spreading them out thinly. The thinner you spread them, the crispier your chips will be. You can use the back of the spoon or a small offset spatula to gently flatten each dollop into a thin circle or irregular shape, about 1/8 to 1/4 inch thick. Leave some space between each dollop as they may spread slightly.
- Place the baking sheet in the preheated oven. Bake for 15-20 minutes, or until the edges are golden brown and the chips are firm and beginning to crisp. The exact time will depend on the thickness of your chips and your oven. Keep a close eye on them in the last few minutes to prevent burning.
- Once baked, carefully remove the baking sheet from the oven. Let the chips cool on the baking sheet for a few minutes. As they cool, they will continue to crisp up. For maximum crispiness, you can gently flip them over and let them cool completely on a wire rack, or simply let them cool on the parchment paper.

To keep your delicious Cottage Cheese Chips at their prime crunch, it’s important to store them correctly. Once completely cooled, store them in an airtight container at room temperature. They are at their best within the first 2-3 days. If they lose a bit of their crispiness after a day or two, you can revive them by placing them on a baking sheet in a low oven (around 250°F or 120°C) for about 5-8 minutes, or until they regain their crisp texture. Freezing is not recommended for these chips, as the texture can become compromised upon thawing.
