  1. Prepare the peach: If using fresh peaches, wash thoroughly, slice in half, remove the pit, and cut the flesh into bite-sized cubes. If using canned or frozen, ensure they are drained well or fully thawed.
  2. Portion the cottage cheese: Scoop the full cup of cottage cheese into a medium-sized bowl.
  3. Assemble the fruit: Arrange the diced peach pieces evenly over the top of the cottage cheese.
  4. Sweeten and spice: Drizzle the honey or maple syrup directly over the peaches and cottage cheese. Sprinkle generously with ground cinnamon.
  5. Add crunch (optional): If using nuts, sprinkle the chopped pecans or walnuts over the topping mixture.
  6. Serve immediately. This dish is best enjoyed right after assembly for optimal texture contrast.

Notes

For a zestier flavor, consider adding a tiny pinch of nutmeg or a light grating of fresh ginger along with the cinnamon. This recipe works well with canned pineapple or fresh berries as substitutes for peaches.
