- Preheat your oven to 400°F (200°C). Line a standard 12-cup muffin tin with paper liners or grease thoroughly.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and shredded coconut until well combined.
- In a separate medium bowl, whisk together the egg, melted butter (or oil), milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Gently fold the mixture together using a spatula until just combined. Do not overmix; a few lumps are acceptable.
- Gently fold in the diced fresh apricots. Evenly distribute the batter among the 12 prepared muffin cups, filling each about two-thirds full.
- Bake for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. If desired, sprinkle the tops with a tablespoon of extra sugar mixed with coconut flakes before baking for a crispier top.
- Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For best results, ensure your butter is melted but not hot when mixing with the other wet ingredients. Fresh apricots are highly recommended, but firm, pitted fresh plums can be substituted if apricots are out of season.
