Ingredients
  

  • 1 pound rotini or farfalle pasta
  • 1 pound cooked and diced chicken breast rotisserie chicken works wonderfully
  • 6-8 slices crispy cooked bacon crumbled
  • 1 cup cherry tomatoes halved or quartered
  • 1/2 cup finely diced red onion
  • 1/2 cup finely shredded lettuce Romaine or Iceberg
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • salt and freshly ground black pepper to taste

Method
 

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the rotini or farfalle pasta and cook according to package directions until al dente. Drain the pasta thoroughly, rinse with cold water to stop the cooking process and prevent sticking, and set aside in a large mixing bowl.

  2. Prepare the Dressing: In a separate medium bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, and garlic powder until smooth and well combined. Season generously with salt and freshly ground black pepper to your liking. Taste and adjust seasonings as needed.

  3. Assemble the Salad: To the large bowl with the drained pasta, add the cooked and diced chicken breast, crumbled crispy bacon, halved cherry tomatoes, finely diced red onion, shredded lettuce, and shredded cheddar cheese.

  4. Combine and Toss: Pour the prepared dressing over the pasta and other ingredients in the bowl. Gently toss everything together until all ingredients are evenly coated with the dressing. Ensure the lettuce is distributed throughout without becoming overly soggy.
  5. Chill (Optional but Recommended): For the best flavor, cover the bowl tightly with plastic wrap and refrigerate the Club Sandwich Pasta Salad for at least 30 minutes before serving. This allows the flavors to meld together beautifully.
