- Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- Prepare the filling: In a large bowl, gently combine the blueberries, quartered apricots, granulated sugar, 1/4 cup flour, lemon zest, and lemon juice. Mix until just coated. Pour the fruit mixture evenly into the prepared baking dish.
- Prepare the crisp topping: In a separate medium bowl, whisk together the rolled oats, 1 cup flour, brown sugar, and cinnamon.
- Cut in the cold butter using a pastry blender, two knives, or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
- Sprinkle the crisp topping evenly over the fruit mixture in the baking dish, covering the fruit completely.
- Bake for 35 to 40 minutes, or until the topping is golden brown and the fruit filling is bubbly around the edges. If the topping browns too quickly, loosely cover the dish with foil.
- Remove from the oven and let cool on a wire rack for at least 15 minutes before serving. Serve warm, ideally with a scoop of vanilla bean ice cream or a dollop of whipped cream.
Notes
For an extra nutty flavor, you can add 1/2 cup of chopped pecans or walnuts to the crisp topping mixture. If using frozen fruit, baking time may increase slightly.
