Method
 

  1. In a medium-sized jar or bowl, add the rolled oats, chia seeds, ground cinnamon, and a pinch of salt. Stir gently to distribute the spices evenly.

  2. Pour in the milk and add the Greek yogurt (or plain yogurt) and vanilla extract. If using, add your chosen sweetener (maple syrup or honey) at this stage.

  3. Whisk or stir everything together very well. You want to ensure there are no clumps of oats or chia seeds sticking to the bottom or sides of the container. Make sure the chia seeds are fully submerged in the liquid to allow them to gel properly.
  4. Cover the jar or bowl tightly with a lid or plastic wrap. Place it in the refrigerator for at least 4 hours, but preferably overnight, to allow the oats to soften and the mixture to thicken.
  5. If you're opting for the cinnamon roll frosting, in a small bowl, combine the cream cheese (or Greek yogurt) with maple syrup or honey. Stir until smooth. Add a tiny splash of milk at a time, stirring continuously, until you reach a drizzly, frosting-like consistency.

  6. Before serving, give the overnight oats a good stir. If they are too thick for your liking, add a splash more milk. Spoon the oats into a serving bowl or eat directly from the jar. Notes
