- If you prefer a smoother texture, pulse your rolled oats a few times in a food processor until they are slightly broken down. This isn't strictly necessary but can help bind the ingredients more cohesively. If you like a chewier texture, leave them whole.1 cup rolled oats
- In a medium-sized mixing bowl, add the creamy peanut butter, maple syrup, applesauce, and vanilla extract. - Using a sturdy spoon or spatula, mix all the ingredients together until everything is evenly distributed. The mixture should be thick and a little sticky, but firm enough to hold its shape. If the mixture seems too dry and crumbly, add another tablespoon of peanut butter or applesauce. - Take about 1-2 tablespoons of the mixture at a time and roll it between your palms to form small balls, about 1 inch in diameter. If the mixture is sticking to your hands, you can lightly dampen your hands with water or a little oil.
- Place the rolled energy balls onto a plate or baking sheet lined with parchment paper. Once all the mixture is rolled, place the plate in the refrigerator for at least 30 minutes to allow the energy balls to firm up. This step is crucial for them to hold their shape.

Store in an airtight container in the refrigerator for up to 1 week. For longer storage, freeze for up to 2-3 months.
