  • 15 oz Whole Milk Ricotta Cheese Drained well
  • 2 tbsp Powdered Sugar Or to taste
  • 1 tsp Vanilla Extract
  • 1/4 tsp Ground Cinnamon
For the Grilled Nectarines
  • 4 medium Nectarines Halved and pitted
  • 1 tbsp Unsalted Butter Melted
  • 1 tsp Ground Cinnamon
  • 1 tbsp Brown Sugar
For Garnish (Optional)
  • 2 tbsp Chopped Pistachios
  • 1 tbsp Honey For drizzling

  1. Prepare the Whipped Ricotta: In a medium bowl, combine the drained ricotta cheese, powdered sugar, vanilla extract, and 1/4 tsp cinnamon. Use a hand mixer or whisk attachment to whip the mixture for 3 to 5 minutes until it is light, airy, and smooth. Cover and refrigerate while preparing the fruit.
  2. Prepare the Nectarines: In a small bowl, whisk together the melted butter, brown sugar, and 1 tsp ground cinnamon. Brush the cut sides of the halved nectarines liberally with this mixture.
  3. Grill the Nectarines: Preheat an outdoor grill or grill pan to medium heat (about 375°F / 190°C). Place the nectarine halves cut-side down on the hot oiled grates. Grill for 4 to 5 minutes without moving them until soft and nicely caramelized grill marks appear.
  4. Flip the Nectarines: Carefully flip the nectarines and grill for an additional 3 to 4 minutes on the skin side, allowing the sugars to further caramelize slightly. Remove from the grill and slice each half into 3-4 wedges.
  5. Assemble the Dessert: Divide the chilled whipped ricotta evenly among four serving dishes or small bowls, creating a smooth base.
  6. Top each serving of whipped ricotta generously with the warm, sliced grilled nectarines. Drizzle with honey and sprinkle with chopped pistachios, if using. Serve immediately.

Notes

Ensure your ricotta is well-drained before whipping; excess moisture will prevent it from becoming light and fluffy. This dessert is best served immediately after grilling the fruit.
