Method
- In a jar, container, or bowl with a lid, add the rolled oats. Pour in your chosen milk.1/2 cup rolled oats, 1 cup milk of your choice
- Stir in the chia seeds and Greek yogurt (if using). These will help thicken the oats and add a delightful creaminess.1 tablespoon chia seeds, 1 tablespoon Greek yogurt
- Add the maple syrup or honey. Gently mash the half ripe banana directly into the mixture or add it as a mashed paste. Stir everything together thoroughly to ensure the sweetener and banana are well distributed.1 teaspoon maple syrup or honey, 1/2 ripe banana banana
- Fold in the chopped dark chocolate chips and the chopped walnuts or pecans. Give it one final gentle stir to evenly distribute these delicious chunky additions.1/4 cup dark chocolate chips, 1/4 cup walnuts or pecans
- Secure the lid on your container and place it in the refrigerator. Let it chill for at least 4 hours, but ideally overnight (8-12 hours). This allows the oats to soften and absorb the liquid, creating the perfect creamy texture.
- In the morning, give your Chunky Monkey Overnight Oats a good stir. If the mixture is too thick, you can add a splash more milk. Serve chilled and enjoy your delicious, ready-to-eat breakfast!1 cup milk of your choice
Notes
Your Chunky Monkey Overnight Oats can be stored in an airtight container in the refrigerator for up to 3-4 days. The texture will continue to develop and soften over time, but it remains delicious. For longer storage, while not ideal for the best texture, you can freeze individual portions in freezer-safe containers for up to 1 month. Thaw overnight in the refrigerator before consuming. Reheating is generally not recommended as they are designed to be eaten cold, but if you prefer a warmer, cooked oatmeal consistency, you can gently heat a portion in a saucepan on the stove or in the microwave for a minute or two, adding a splash of milk if needed.
