Ingredients
  

  • 1/4 cup instant coffee granules (espresso powder works too, but instant is key for texture)
  • 1/4 cup granulated sugar (or your preferred sweetener like maple syrup or erythritol, adjust to taste)
  • 1/4 cup hot water
  • 1/2 cup milk (dairy or non-dairy like almond, oat, or soy)
  • 2 tablespoons unsweetened cocoa powder

Method
 

  1. In a medium bowl, combine the instant coffee granules and granulated sugar. Pour in the hot water.

  2. Using a whisk, an electric hand mixer, or even a milk frother, vigorously whisk the coffee and sugar mixture. Continue whisking for about 5-7 minutes, or until the mixture becomes light, fluffy, and forms stiff peaks. It should resemble a light brown meringue or fluffy mousse.
  3. In a separate glass or jar, add the unsweetened cocoa powder. Pour in about 2 tablespoons of the milk and stir until a smooth paste forms, ensuring there are no lumps of cocoa powder.

  4. Gently heat the remaining milk until it's warm but not boiling (you can do this in a saucepan on the stove or in the microwave). Once warm, pour it into the glass with the cocoa paste. Whisk or stir thoroughly until the chocolate is fully incorporated and the milk is smooth and rich.

  5. Carefully spoon the fluffy whipped coffee mixture over the top of your warm chocolate milk.
  6. Drizzle with chocolate syrup, add a dollop of whipped cream, and sprinkle with chocolate shavings if desired. Serve immediately and enjoy!

Notes

The whipped coffee topping is best enjoyed immediately for optimal fluffiness and texture. If you have leftovers, store the whipped coffee topping in an airtight container in the refrigerator for up to 24 hours. It may deflate slightly but can often be re-whipped lightly with a whisk or fork to revive some of its texture. The chocolate milk base can also be stored separately in an airtight container in the refrigerator for 1-2 days.
To reheat, gently warm the chocolate milk over low heat on the stovetop or in the microwave. Once warm, you can either add the chilled whipped topping directly to the warm chocolate milk (it will melt and create a lovely creamy layer) or attempt to re-whisk the topping before serving. Freezing is generally not recommended for either component as the texture of the whipped coffee will be significantly altered upon thawing.
