Ingredients
  

  • 1 scoop chocolate protein powder approximately 30g, whey, casein, or plant-based blend
  • 1/2 cup unsweetened almond milk or milk of choice
  • 1/4 teaspoon xanthan gum
  • 1/4 teaspoon vanilla extract
  • to taste optional sweeteners stevia, erythritol, or sugar

Method
 

  1. In the bowl of a stand mixer fitted with the whisk attachment, or in a large bowl if using a hand mixer, pour in the 1/2 cup of unsweetened almond milk. Add the 1/4 teaspoon of vanilla extract. If you prefer a sweeter fluff, now is the time to add your chosen sweetener, starting with a small amount and tasting as you go.

  2. Sprinkle the 1/4 teaspoon of xanthan gum over the liquid. This is a crucial ingredient for achieving that signature fluffy texture and will act as a stabilizer. Next, add the 1 scoop (approximately 30g) of your favorite chocolate protein powder. Ensure it's a good quality powder that you enjoy the taste of, as it will be the primary flavor component.

  3. Start whisking the ingredients on low speed to combine everything without creating a mess. Gradually increase the speed to medium-high.
  4. Continue to whisk, gradually increasing the speed to high. Scrape down the sides of the bowl periodically to ensure all the ingredients are incorporated. You will notice the mixture begin to thicken and become airy. This process can take anywhere from 3 to 7 minutes depending on your mixer. You are looking for a consistency similar to whipped cream or a thick mousse.
  5. Once the mixture has achieved a light, airy, and voluminous texture, stop whisking. If it’s not quite thick enough, whisk for another minute or two. If it seems too stiff, you can add a tablespoon of almond milk at a time and whisk briefly to loosen it.
