  • 1/2 cup rolled oats old-fashioned oats are recommended for best texture
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon creamy peanut butter or crunchy, if preferred
  • 1 teaspoon chia seeds optional, but adds thickness and nutrients
  • 1-2 teaspoons maple syrup or honey adjust to your sweetness preference
  • 1 cup milk of choice dairy, almond, soy, oat, etc.
  • 1/4 teaspoon vanilla extract
  • Pinch salt

Method
 

  1. In a medium jar or airtight container, add the rolled oats, unsweetened cocoa powder, chia seeds (if using), and a pinch of salt. Stir these dry ingredients together thoroughly to ensure the cocoa powder is evenly distributed and there are no clumps.

  2. Next, add the creamy peanut butter, maple syrup or honey, vanilla extract, and your chosen milk to the container.

  3. Stir all the ingredients together very well. This is a crucial step to ensure the peanut butter is fully incorporated and the chia seeds are dispersed. A whisk or a fork can be helpful here to break up any peanut butter clumps.
  4. Seal the container tightly with a lid and place it in the refrigerator. Allow the mixture to chill for at least 4-6 hours, or ideally, overnight. This allows the oats and chia seeds to absorb the liquid, creating a thick and creamy texture.
  5. In the morning, give the overnight oats a good stir. If the mixture is too thick for your liking, you can add a splash more milk to reach your desired consistency. Serve cold, topped with your favorite extras.
