Ingredients
  

Peanut Butter Base
  • 1 cup Quick Oats (or rolled oats)
  • 1 cup Creamy Peanut Butter Natural or conventional works fine
  • 1/2 cup Powdered Sugar
  • 1/4 cup Unsalted Butter Melted
  • 1/2 teaspoon Vanilla Extract
Chocolate Topping
  • 1 cup Semi-Sweet Chocolate Chips
  • 1/2 cup Creamy Peanut Butter
  • 1 tablespoon Coconut Oil Optional, for smoother melting

  1. Line an 8x8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal. Set aside.
  2. Prepare the base: In a medium bowl, combine the quick oats, 1 cup of peanut butter, powdered sugar, melted butter, and vanilla extract. Mix well until a thick, uniform dough forms.
  3. Press the peanut butter oat mixture firmly and evenly into the bottom of the prepared baking pan. Use the bottom of a measuring cup to ensure it is tightly packed.
  4. Prepare the topping: In a microwave-safe bowl, combine the chocolate chips, 1/2 cup of peanut butter, and coconut oil (if using). Microwave in 30-second intervals, stirring well after each, until completely smooth and melted.
  5. Pour the chocolate mixture evenly over the peanut butter base and spread it out quickly with a spatula before it sets.
  6. Refrigerate the bars for a minimum of 2 hours, or until the chocolate topping is completely firm. Use the parchment paper overhang to lift the slab out of the pan, then slice into 12 bars.

Notes

For cleaner slicing, slightly warm the knife blade under hot water before cutting. Store leftovers in an airtight container in the refrigerator for up to one week.
