Instructions
- In a small saucepan, whisk together the Cream of Rice cereal, cocoa powder, sugar, and salt.
- Gradually whisk in the milk, ensuring no lumps of cocoa or cereal remain. It is easiest to add about 1/4 cup of milk first to create a smooth paste before adding the rest.
- Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring constantly to prevent scorching on the bottom.
- Once boiling, reduce the heat to low and continue cooking for 5 to 7 minutes, stirring frequently, until the cereal has thickened to your desired consistency. The mixture will thicken significantly as it cooks.
- Remove the saucepan from the heat. Stir in the vanilla extract.
- Divide the hot chocolate cream of rice into two bowls. Top each serving immediately with a small pat of butter or a sprinkle of chocolate chips, if using.
Notes
For a richer, fudgier texture, use less milk (start with 1 3/4 cups) or substitute some of the milk with heavy cream. If the mixture thickens too much upon standing, stir in a splash of hot water or milk before serving.
