Ingredients
  

  • 1 cup fresh strawberries hulled and finely chopped (reserve a few whole strawberries for garnish, if desired)
  • 1.5 cups plain Greek yogurt full-fat recommended for creaminess
  • 2 tablespoons honey or maple syrup adjust to your sweetness preference
  • 0.5 teaspoon vanilla extract
  • 0.5 cup dark chocolate chips or chopped dark chocolate
  • 1 teaspoon coconut oil optional, helps achieve a smoother chocolate coating
  • N/A N/A chopped nuts, shredded coconut, or granola optional, for topping

Method
 

  1. Wash and hull your fresh strawberries. Finely chop them into small pieces. If you plan to add whole strawberries as a garnish later, set a few aside.

  2. In a medium bowl, combine the plain Greek yogurt, honey or maple syrup, and vanilla extract. Whisk these ingredients together until well combined and smooth. Ensure the sweetener is evenly distributed throughout the yogurt mixture.

  3. Gently fold the finely chopped strawberries into the sweetened yogurt mixture. Be careful not to overmix, as you want to maintain some texture from the strawberry pieces.

  4. Line a baking sheet with parchment paper or a silicone baking mat. Using a tablespoon or small cookie scoop, drop rounded portions of the strawberry yogurt mixture onto the prepared baking sheet. Aim for bite-sized portions, leaving a little space between each as they will expand slightly.
  5. Place the baking sheet in the freezer for at least 2-3 hours, or until the yogurt bites are completely firm and solid. This is a crucial step to ensure they hold their shape when coated in chocolate.
  6. While the yogurt bites are freezing, prepare your chocolate coating. In a microwave-safe bowl, combine the dark chocolate chips (or chopped dark chocolate) and the coconut oil (if using). Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely melted and smooth. Alternatively, you can melt the chocolate using a double boiler.

  7. Once the yogurt bites are frozen solid, carefully remove them from the freezer. Dip each frozen yogurt bite into the melted chocolate, ensuring it's fully coated. A toothpick can be helpful to dip and maneuver the bites if they are small.
  8. Immediately after dipping in chocolate, while the chocolate is still wet, sprinkle with your desired toppings like chopped nuts, shredded coconut, or granola.

  9. Place the chocolate-covered bites back onto the parchment-lined baking sheet. Return them to the freezer for another 30-60 minutes, or until the chocolate has fully hardened.
  10. Once the chocolate is set, transfer the Chocolate Covered Strawberry Yogurt Bites to a serving platter or an airtight container. Serve immediately and enjoy this refreshing and delicious treat!

Notes

Best stored in the freezer. Can be eaten straight from the freezer or allowed to sit at room temperature for a minute or two if too hard.
