Ingredients

  • 1 cup Full-fat cottage cheese well-drained (240g)
  • 1/2 cup Unsalted butter softened (120g)
  • 1/2 cup Granulated sugar (100g)
  • 1/4 cup Brown sugar packed (50g)
  • 1 teaspoon Vanilla extract
  • 1 cup All-purpose flour (120g)
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1 cup Semi-sweet chocolate chips plus more for rolling (170g)

Equipment

  • Fine-mesh Sieve
  • Bowl
  • Medium Mixing Bowl
  • Electric mixer or sturdy whisk
  • Small Bowl

Method

  1. Begin by thoroughly draining your cottage cheese. You can do this by placing it in a fine-mesh sieve set over a bowl for at least 15-20 minutes, or until most of the liquid has been removed. This step is crucial for achieving the right texture for your cookie dough bites.
    1 cup Full-fat cottage cheese
  2. In a medium mixing bowl, combine the softened butter, granulated sugar, and packed brown sugar. Use an electric mixer or a sturdy whisk to cream these ingredients together until the mixture is light and fluffy, resembling pale yellow clouds. This incorporates air, which contributes to the final texture.
1/2 cup Unsalted butter, 1/2 cup Granulated sugar, 1/4 cup Brown sugar
  3. Stir in the vanilla extract and the drained cottage cheese. Continue mixing until everything is well combined and the mixture is smooth and creamy. Don't worry if it looks a little watery at this stage; the flour will absorb excess moisture.
1 teaspoon Vanilla extract, 1 cup Full-fat cottage cheese
  4. In a separate small bowl, whisk together the all-purpose flour, baking soda, and salt. This ensures that the leavening agent and salt are evenly distributed throughout the dough.
1 cup All-purpose flour, 1/2 teaspoon Baking soda, 1/4 teaspoon Salt
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or stirring with a spatula until just combined. Be careful not to overmix, as this can lead to tough cookie dough bites. The dough should start to come together and resemble a thick cookie dough.
1 cup All-purpose flour, 1/2 teaspoon Baking soda, 1/4 teaspoon Salt, 1 cup Full-fat cottage cheese, 1/2 cup Unsalted butter, 1/2 cup Granulated sugar, 1/4 cup Brown sugar, 1 teaspoon Vanilla extract
  6. Gently fold in the semi-sweet chocolate chips until they are evenly distributed throughout the dough. Reserve a few extra chocolate chips if you plan to roll the finished bites in them for an extra touch.
    1 cup Semi-sweet chocolate chips
  7. Roll the cookie dough between your palms into small, bite-sized balls, about 1-inch in diameter. If desired, you can press a few extra chocolate chips into the outside of each ball for a decorative finish.
    1 cup Semi-sweet chocolate chips
