Ingredients
  

  • 1 pound chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese plus more for topping
  • 1/4 cup all-purpose flour
  • 2 large eggs beaten
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil for frying
  • 1 jar marinara sauce about 24 ounces
  • 12 slider buns or dinner rolls
  • 8 ounces shredded mozzarella cheese
  • fresh basil leaves for garnish (optional)

Method
 

  1. Cut the chicken breasts into thin cutlets or bite-sized pieces, about 1 inch in size. Season both sides generously with salt and pepper.

  2. Create three shallow dishes. In the first, combine the flour. In the second, whisk the eggs. In the third, mix the panko breadcrumbs, grated Parmesan cheese, Italian seasoning, and garlic powder.

  3. Dredge each piece of chicken in the flour, shaking off any excess. Then, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat thoroughly with the panko and Parmesan mixture, pressing gently to ensure the breadcrumbs adhere well.

  4. Heat the olive oil in a large skillet over medium-high heat. Carefully add the breaded chicken pieces in a single layer, working in batches if necessary to avoid overcrowding the pan. Fry for 2-3 minutes per side, or until golden brown and cooked through. Remove the chicken and place it on a paper towel-lined plate to drain any excess oil.

  5. While the chicken is draining, pour the marinara sauce into a saucepan and heat it over medium heat until simmering.

  6. Slice the slider buns in half horizontally. Spread a generous tablespoon or two of warm marinara sauce on the bottom half of each bun. Top the sauce with a few pieces of fried chicken.

  7. Sprinkle a generous amount of shredded mozzarella cheese over the chicken on each slider. Place the sliders on a baking sheet. Broil for 2-3 minutes, or until the cheese is melted and bubbly and lightly golden. Watch them closely to prevent burning.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 2-3 days. Reheat in a preheated oven at 350°F (175°C) for about 8-10 minutes.
